Baking


I really like to bake. So does Hailee, most of the time she loves to help and always ask to make something. rr Sometimes I am good at it, sometimes I am not. I baked 2 things this week. Usually I limit my baking to once a week but I had a recipe I wanted to try for cookies and we picked apples on Monday so I had to make a pie.
I was reading my friend Kate's blog and she made these awesome chocolate chip cookies that she got from another blogger that she got from the NY times. The recipe is a bit different than your standard one, but they were seriously so so good! Here is the link: Cookies. Letting the dough rest does make a difference as does having you ingredients at room temp. They were very yummy and will be making them often. One of the best cookie recipes I have ever made!

Then tonight I made a great Apple Pie. Tyler and I both really liked it. Here is the recipe:
2C finely chopped apple
2 T flour
¾ C sugar
1 C sour cream
1 beaten egg
1 tsp vanilla
1/8 tsp salt
Mix flour and sugar, add sour cream, egg, vanilla and salt. Beat until smooth. Add apples and fold gently. Pour into lightly baked pie shell (store bought or homemade). Bake at 375 until set (about 40-45 minutes) Knife should come out clean when inserted.

Topping:
½ C sugar
3/8 C flour
¾ tsp cinnamon
4 T butter
Mix together until crumbly. Sprinkle over pie while still hot.

Optional- serve with vanilla ice cream.

Those cookies look really good! I always get intimidated though when the recipe is a little different. Maybe I'm just lazy.:)

I LOVE those cookies. Did you sprinkle them with sea salt too? That is my other new favorite tip. I am glad that you tried them. They are sooooo Yummy!!!! I think I will have to make another batch this weekend.

I didn't do the sea salt. I think I will next time. Those were the best!
We need to plan a time to get together. Do you guys ever go to Apple Hill?

What is apple hill? I don't think I have ever been. We should totally go.

Apple Hill is just above Placerville. There are all different kinds of orchards and fun things for the kids. www.applehill.com
